Here is what I got so far.
1. Talk to Brutus in Upper Jeuno.
2. Head to La Theine Plateau E-5 and talk to Chocobo Tracks
3. Return to Upper Jeuno and talk to Brutus.
4. Head to Southern San Doria Chocobo Stables and talk to Hantileon.
5. Return to Upper Jeuno and talk to Brutus.
6. Wait 1 hour RL time.
7. Talk to Brutus, he will give you an egg.
8. Head to Sandoria Chocobo Stables and trade egg to Hantileon.
9. Wait for it to hatch... no idea how long or what factors into this wait.

A quest in Jeuno has just opened up!
Chocobo on the Loose
Client: Brutus (Chocobo Stables, Upper Jeuno)
Summary: A chocobo has run away from the stables in Upper Jeuno, and Brutus wants you to help bring it back.
Go to Upper Jeuno and talk to Brutus. He'll mention wild chocobos as he walks away, which excites one of the chocobos in his stall. This presents you with an option: either set the bird free or not. Being the loon I am, I decided to set it free. Brutus comes back to see the chocobo missing and strikes up a conversation about La Theine. He then asks you to go retrieve the missing chocobo.
Next, go to La Theine, at position E-5, and look for Chocobo Tracks. They should be up against the mountain, a bit off the road. This will give you another cutscene. Return to Jeuno and speak with Brutus to observe the behavior of the chcobos. This will lead to an emergency meeting in San d'Oria with the VCS. In Southern San d'Oria, go inside the chocobo stables and speak with the man on the eastern (left) wall. The meeting will commence, and you'll come up to another decision. It doesn't matter too much what you say, since whatever you say will be met with utter disgust by the representatives; Brutus will save you and allow you to choose again. Once I chose the last option, reforming the VCS standards, I was presented with one final option: let the chocobos come together.
Head back to Jeuno and speak with Brutus. After a cutscene, he'll tell you he needs more time to speak with the representatives. Come back one GAME day later and he'll give you a Chocobo Egg (This egg is a BIT warm to the touch).
So far, this quest seems complete; I don't know, however, which chocobo hatches from the BIT egg, and it's not certain whether or not you're allowed to raise a chocobo without having completed this quest.

Well, you CAN at least start the raising process without the "Chocobo on the Loose!" quest done. I didn't do this quest until after I had already started raising a chocobo.

You guys realize you can bypass all of that right. The mithra next to the AH in Ru'Lude Gardens sells 3 different chocobo eggs. One of the eggs fells slightly warm to touch, ones faintly warm to the touch, ones a bit warm to the touch. There are people in each nation's Chocobo stables that will care for the egg/chick. I did not do that quest and was able to trade my egg.

Yes, you can start raising the chocobo without doing the quest, but I'm assuming the quest is required for something in the future, perhaps getting the chocobo whistle (which is needed to call your chocobo to ride).

You need to zone after you wait your game day to get your egg, or Brutus will not give you the egg.

I also got the BIT egg from this quest, and I'm starting to feel a little skeptical about the idea that each different egg hatches a different breed. Yes there are 5 different eggs of 5 different descriptions, but... doesn't this seem a little easy? I mean, despite that we obviously don't know at the moment what comes out of what. But the fact that at least 3 of the eggs are available to choose from so cheap leaves me wondering if it's more of a probability based thing, with the ones obtained from the ISNMs being more probable to produce... rarer results. I know that I'd certainly find it more fun were that the case. It wouldn't be any fun if you could buy a guaranteed Destrier egg for a million gil.
Not that, of course, I have any evidence for this. But that egg is in the cooker, and I'll be anxious to see what hatches out!
As a side note, yes, you can skip all the hastle of the quest, but I think it's quite worth it for the amusement of the story. I also hold out vain hope that the egg obtained from the quest might have some better probabilities attached to it.
Has anyone received anything besides the BIT egg from the quest?

My guess with the 5 different eggs is the starting stats the chocobo has.

All I want to know is how to get a black chocobo. I hope I don't have to do one of those ISNM to get one. Someone on Allah had a theory that which city you raise your chocobo in might affect breed/color. For example, San d'Oria was known for raising the large, black chocobos used in battle. Kinda doubt that theory, but we'll see. I'm going to wait a few weeks until someone posts a guide before I start raising my chocobo. Sounds fun to me. ^^

I'm using the "Shadows of the Mind" ISNM egg and waiting for it to hatch. my guess is that the eggs dont say whats in them although they are different. the BIT egg from the quest might be of a different type than the BIT egg from the shop.

i would have assumed since they are making this game as life like as possible. that they would start out with two or three fo the colors and you have to get the rarer breeds by actualy breeding them. i have no proof that this is the case but it makes sense to me

Maybe since the 5 types are all based on amount of warmth, that it has something to do with how long it will take to hatch?

Once your chocobo has reached a mature stage of development, it is possible to match it with other chocobos. The resulting offspring may exhibit the attributes or coloring of its parents.
There should have color already
