Food "hidden" stats

Cuer, can you or someone else answer me this:

How is it that we supposedly "know" the hidden stats on all the random foods out there? Are they visible when people hack the dats or something?

I dont see how anyone can actually quantify that something gives +3enmity, or Resist Sleep, Charm, RACC, etc.

Is this just something that people dream up and we take as being true? Or can they actually be discovered somewhere in the game files?

I've heard it explained as JP mini-guides that are periodically made that provide such details. I've never seen one, which I find rather odd. If they truly exist and include hard facts, people should be going bonkers to get/scan/translate/transcribe-to-bible these things rather than just find a stat on a JP website and say "Ok".

A friend of ours lives in Japan and he bought a bunch of the Japanese guides for the game when he started to play again this past year. He said they were amazing and had a ton of information. He actually decided to stop playing again (just had a kid ^^) so he offered to let us buy the guides from him. I'm guessing stats like that would be in them, but I'm not sure. I think he had like four of them or something.
