It seems to be level 56-57, with about 10,000 HP.
Soboro Sukehiro does not drop if it uses Self-Destruct. It always drops otherwise.
I had heard this before, and our 5 runs confirmed it: on two runs we failed to stun all the Self-Destructs, and it didn't drop. On 3 runs we consistently stunned it, and it dropped.

Hmm, it seems I was wrong and the earlier run was just coincidence. Today I went on another Soboro run; 3 pops, 2 drops, one Self-Destruct on a pop that did end up dropping.
Sorry about the misinformation.
