I was just wondering how you know what the "unseeable" food stats are such as +acc%

"As far as I know" somepage does a great job w/food effects and all/most effects are listed. Go to the Food link to your left and you can choose all types of food there. Or you can search by status change (Such as Accuracy). After picking Accuracy it will give you a list of food that has any kind of ACC+ on it.

I'm pretty sure what he's asking is: "how does somepage know what the actual #/% changes to stats like Acc and Enm that are invisible. They aren't listed anywhere in-game."
I think the answer was posted a while back as well, and it was something like: "we base those numbers off a JPN website that supposedly has some kind of inside connection with SE so they are reputable."

That is correct; most of the information regarding food stats comes from various Japanese websites, which in turn gather their stats (and then test them) from Japanese FFXI guides. The guides published there are far more accurate than the ones available in English; there are updated guides published a couple months after every major FFXI patch. This makes it easy for them to figure out most of those stats, if they haven't already been figured out.
For Accuracy, it is possible to figure that out manually by comparing Accuracy equipment versus the food in question, and checking different mobs. This is tedious, but it is possible to get a decent idea of the stats on food that way, as well.
